Ingredients:

• 4 to 6 pork chops

• 1-1/2 cups sofrito (see recipe below)

• 1 cup sliced tomato

• 2 packets of sazon seasoning

• 5-7 green olives

• 2 tbsp. olive oil

• 1-1/2 cups chicken stock

 

Sofrito Ingredients:

• 1 whole onion

• 3 garlic cloves

• 2 cups sweet baby peppers (red, yello, orange)

• 1 cup cilantro

• 1 tbsp. culantro cooking base

 

Adobo Seasoning Ingredients:

• 2 tbsp. salt

• 1 tbsp. paprika

• 2 tsp. ground black pepper

• 2 tsp. dried oregano

• 1 tsp. garlic powder

• 1-1/2 tsp. onion powder

• 1-1/2 tsp. cumin powder

• 1 tsp. chile powder

Cooking Directions:

First, make your sofrito mixture and adobo seasoning. Then season pork chops with adobo spice blend. Add olive oil to pan and fry pork chops on both sides until they’re a light golden brown. At this point you do not have to cook the pork chops completely. Place them in your slow cooker and set aside. In the same frying pan, sauté your sofrito mixture, 1 cup of sliced tomatoes and 5-7 green olive, and 2 packets of sazon seasoning. Stir fry these ingredients for about 3-5 minutes. Pour over pork chops in slow cooker. Pour in 1-1/2 cups of chicken stock. Mix in with the pork chops.

Cook on high for about 3 hours or until pork chops are completely cooked and almost falling off the bone. Enjoy!
