Thai Curry Chicken
This is our version of Thai Chicken Curry. It’s so tasty and so easy to make. It’s a great dish for any day of the week. Just prepare in the morning and let it slow cook. We loved the aroma of chicken curry in our home. We hope you enjoy!

• 5 chicken thighs
• 2 tablespoons butter (unsalted preferred)
• 1 whole sliced onion
• 3 cloves minced garlic
• 1 13.5 oz. can of coconut milk
• 1 6.88 oz. jar of curry paste
• 1/2 cup of chicken stock
• salt & pepper
• paprika
• thai or jalapeño chile (optional for added heatha
Directions:
Lightly season chicken thighs with salt, pepper and paprika. In a medium pan, melt 2 tablespoons butter and fry chicken until golden brown. Then place chicken in your slow cooker. Next, cook sliced onions and garlic until onions are transparent. Transfer to the slow cooker. Add one jar of curry paste (can be green, red, yellow, penang, etc…). Then add one can of coconut milk and 1/2 cup of chicken stock. Season with fresh ground pepper. Mix ingredients thoroughly. For extra spice, you can add thai or jalapeño chile. Cover and set your slow cooker to low. Cook for approximately 7 to 8 hours or until meat is tender and almost falling off the bone. Serve over jasmine or any long grain rice.
