Roasted Chicken, Sausage & Peppers
Here’s a tasty recipe you should try. It’s also pretty easy to make! Juicy roasted Italian sausage, chicken thighs, peppers, mushrooms and fresh Italian herbs make this dish a winner any day of the week! We hope you try this recipe and thank you for watching our videos!
Ingredients:
4 Italian sausage links
4 chicken thighs, skin on
1 cup red bell peppers
1 cup yellow bell peppers
1 cup green bell peppers
1/2 cup red onions
1/2 yellow or brown onions
1 cup mushrooms, sliced
2 cloves minced garlic
1 large potato, cut into 2 inch chunks
3 sprigs of fresh rosemary (or 1 tsp dried)
3-5 sprigs of fresh thyme (or 1 tsp dried)
1 tsp dried oregano
olive oil
salt
pepper
Directions:
Partially fry the sausages in a 1/2 tbsp of olive oil. Brown both sides, approximately 4 minutes each side. Poke little slits in sausage. Set aside in and let cool. When they are cool enough to the touch, slice them into bite size pieces. Add the chicken, sausage, peppers, onions, mushrooms, potatoes and garlic in a large bowl. Drizzle some olive oil on top of all ingredients. Add in your rosemary, thyme, oregano, salt and pepper. Mix all ingredients and then pour them into a roasting pan or baking dish. Roast uncovered for 50-60 minutes in a 450° F oven. Make sure your chicken and sausage are completely cooked. You may need to cook more or less time… depending on the the size of your chicken thighs.
Let stand for 5 minutes. Then you’re ready to serve!
