Lemon Garlic & Herb Roasted Chicken
Here’s one that my family really enjoys. Nothing says comfort food more than a perfectly roasted tender and juicy chicken. The marinade we prepare really brings out the flavor of the roasted chicken skin. It’s perfect for Sunday dinners with the family or any day of the week. It’s so easy to prepare. We hope you enjoy this recipe as much as my family does!
Ingredients:
- 1 large whole roasting chicken
- minced garlic – 4 to 5 cloves
- juice of half lemon
- 1/2 tbsp. fresh rosemary, chopped (dried is fine too)
- 1/2 tsp. thyme
- 1 tsp. salt
- 1 tsp. ground black pepper
- 1 tsp. soy sauce
- 1 tsp. worcestershire sauce
- 1 bay leaf
- 2 large carrots, chopped
- • brown onion, chopped
Preheat oven to 350 degree fahrenheit. Rinse chicken in cold water and pat dry. Prepare your marinade mixture by combining the garlic, lemon juice, rosemary, thyme, salt, black pepper, soy sauce and worcestershire sauce. Gently separate the skin from the flesh. Place some of the marinade between the skin and flesh. Also coat the outer skin with the marinade mixture. place the half lemon and some of the carrots and onions inside the cavity. Place chicken in a large dutch oven. Place the remaining carrots and onions around the top of the chicken. Cover and place in the oven. Cook for about 1 1/2 hours or until the chicken is completely cooked and fork tender. You can baste the chicken for added flavor to the skin.
