Caldo de Pollo – Mexican Chicken Soup
When it gets cold and rainy here in Southern California, or when someone in my family, including myself has a cold or flu, this is my go to remedy, Caldo de Pollo. I learned how to make this dish from a Mexican friend of mine. However, I added my own twist on it by adding pickled jalapeƱos and the picked juice it came in. To finish it off, I squeeze juice from half of a lemon to bring out the flavors of this savory and delicious soup. I like to serve this soup with fresh warm flour tortillas, slightly burnt around the edges. Here in Southern California, we grew up around Mexican culture and we are fortunate to be able to enjoy authentic Mexican cuisine at any time of day. And this particular dish is very close to my heart, because it comforted me and my family and friends when we weren’t feeling well.
